Ingredients Needed:
- Winona Pure Extra Virgin Olive Oil Spray
- Winona Pure Coconut Oil Spray
- Butternut squash
- Asiago cheese
- Arborio rice
- Shallots
- Minced sage
- Salt and pepper
- Cream sherry or white wine
- Vegetable stock
Assembly:
- Cube and spray the squash with either Winona Pure EVOO, or Coconut Oil Spray
- Roast the cubed squash
- In a saute pan sprayed with Winona Pure EVOO or Coconut Oil Spray - toast the arborio rice, shallots minced sage and salt and pepper
- Splash with cream sherry or white wine
- Let alcohol cook off and add vegetable stock to cover rice
- Cook off and repeat this until the rice is nice and tender
- Add the diced squash and finish with the shredded asiago cheese
- Serve and enjoy!
