Ingredients needed:
- Using grilled or Rotisserie white meat chicken:
- Green onion
- Water chestnuts (sliced)
- Craisins (dried cranberries)
- Celery chopped
- Toasted Cashews
- light Mayonnaise
- Sliced Monterey Jack Cheese
- Salt and pepper
Assembly:
- Add all of the above ingredients to the chopped chicken and add a little Mayo at a time, to achieve a dryer salad.
- Using a Ciabatta roll or Sour Dough roll, cut open and add the chicken salad mixture to the bread.
- Arrange the Monterey Jack and broil to your desired temp and brownness. This can also be served as an open face sandwich as well!
