Ingredients Needed:
- Poblano peppers
- 2 White onions
- Green chili's
- Pork butt roast
- Colby jack cheese
- Chipotle mayo
Assembly:
- Seed the pablano peppers
- Roast 2 poblano peppers on a gas burner until blackened
- Put them in a paper bag to steam for about 10 minutes
- Blend the green chilis with the 2 white onions and seeded poblanos until they're a paste
- Rub this paste over the boneless pork butt roast
- Place the roast in a crock pot with shallow water
- Leave the crock pot on over night at a low setting, 10-12 hours
- Remove and discard the fat
- Use the meat as you would taco meat
- Garnish with colby jack cheese, chipotle mayo, and pico
- Enjoy!
